Dr. Keamy loves this recipe because carrots and parsnips are rich in vitamin A, the one vitamin credited for promoting healthy vision. Vitamins K, C, and potassium also add to the nutritional value of this delicious dish.

Roasted Carrots and Parsnips

Roasted Carrots and Parsnips
4 medium carrots
4 medium parsnips
2 tsp olive oil
2 tsp maple syrup
A few sprigs of fresh rosemary and thyme
Pinch of salt

Preheat 450. Combine the olive oil and maple syrup. Scrub clean or peel the carrots and parsnips. Cut the larger ones crosswise at the thicker end and cut those pieces lengthways into halves/quarters so that all pieces are about 1” wide. Because they take longer to cook, give the carrots a jump-start; lay them on a rimmed baking sheet, brush sparingly with the oil/maple syrup mixture, and bake for 3-4 minutes. Add the parsnips and brush everything with the remaining oil/syrup mixture. Sprinkle with salt and lay the rosemary and thyme sprigs on top. Give the tray a shake occasionally and continue to cook for 25-30 minutes or until tender and browned. Toss with a spatula and serve on your favorite platter.
